We try so many new recipes that we figured it would be nice to compile a video of our favorites every quarter. So with this being the last Friday in March, here's our first Best of What's for Dinner for 2021! It was HARD to narrow the list down to just 5. There were several that almost made the cut. Lauren's Indian Chicken (Cranberry Chicken):

1 large pack chicken thighs (boneless, skinless)
1 bottle French dressing
1 can whole berry cranberry sauce
1 pack Lipton onion soup mix

Place chicken thighs in 9x13 pan and poke holes in it to allow it to absorb the sauce. Mix together other 3 ingredients in a bowl and pour over the chicken. Put in 350F oven for 5060 minutes.

Copycat Applebee's Fiesta Lime Chicken (from Cathy):

4 pieces of chicken (could also use boneless, skinless thighs)
1/2 cup Shredded Colby Jack Cheese

Marinade:
1/2 cup water
3 Tbls. Lime juice
2 Tbls. Soy Sauce
1/2 Tbls. Worcestershire Sauce
3 cloves garlic, minced
1/4 tsp black pepper
1/2 tsp onion powder
1/2 tsp garlic powder

Mexican Ranch Dressing:
1/4 cup ranch dressing
1/4 cup sour cream
1/4 cup salsa
1 Tbsp lime juice
1 clove garlic, minced

In a Ziplock bag, combine all marinade ingredients with chicken. Refrigerate and marinate for at least 8 hours and up to 24 hours. In the meantime, prepare ranch dressing and mix until smooth. Refrigerate.
Remove Chicken from marinade, and Grill or use a stovetop grill pan to grill. When chicken is thoroughly cooked, top each piece of chicken with some shredded Colby jack cheese and the Mexican ranch dressing. Serve immediately.
