CARROT CAKE
CAKE
1 ¼ cups white sugar
1 cup canola or vegetable oil
3 eggs
1 teaspoon vanilla
2 cups allpurpose flour
1 ½ teaspoons cinnamon
¼ teaspoon nutmeg
1 teaspoon baking soda
½ teaspoon salt
3 cups shredded carrots (about 1 pound)
½ cup chopped walnuts
Extra nuts for decorating cake
Bake at 350 F or 177 C for 30 minutes
FROSTING
8 oz cream cheese, softened at room temperature
4 tablespoons butter, softened at room temperature
2 teaspoons milk
1 teaspoon vanilla
4 cups powdered sugar/icing sugar
