Yeah. You can beat Breath of the Wild without getting the sheikah slate. The one item you need to even begin the game? Nah. Not even close. You can skip that.
Not getting the Sheikah Slate results in the game not allowing you to:
Fast travel
use runes
activate shrines
activate towers
use your map
have a minimap
among other things!
