for the BBQ Short Ribs:
2lbs beef short ribs (8 pieces)
1/4 cup Swine Life Prime Beef Rub
1/4 cup Killer Hogs The BBQ Rub
1 diced onion
8 cloves garlic
1/4 stick butter
1 Tablespoon olive oil
8oz Killer Hogs Vinegar Sauce
8oz beef broth

1.Season the short ribs with a layer of Swine Life Prime Beef followed by a layer of Killer Hogs The BBQ Rub2. Place the short ribs on a 250 degree smoker and cook for 11/2hrs or until the outside begins to brown and the bones start to pull back. 3. Place the diced onion and garlic cloves in an aluminum pan and season with Prime Beef Rub. Add a little olive oil and pats of butter. Cook the vegetables on the pit beside the short ribs. 
4. Move the short ribs to the pan with the onions and garlic. Make sure the bones are facing up, top each short rib with the vinegar sauce and pour the beef broth around the sides. 
5. Cover the pan with aluminum foil and raise the smoker temp to 300 degrees. Continue to cook until the short ribs are probe tender. 
6. Remove from the pit and rest for 2030 minutes. 

for the Mac N Cheese:
6oz dry elbow macaroni 
1/4 cup butter
1/4 cup flour
2 cups whole milk
4 cups shredded cheese use your favorite
1 teaspoon salt
1 teaspoon black pepper

1. Add the butter to 2QT pot over medium heat. Whisk in the flour stirring constantly to keep it smooth. 
2. After 2 minutes slowly stir in the milk. Bring to a slight simmer to thicken. 
3. Gradually add the shredded cheese and little at a time until all the cheese is incorporated. 
4. Season with salt and pepper to taste. 
5. Cook the macaroni noodles according to package directions and combine the pasta with the cheese sauce. 
6. To serve add Mac and Cheese to a dish and top with a big pile of shredded BBQ Short Ribs.
