BBQ 101 - The Reverse Sear Steak on a Offset Smoker

I wasn't planning on videoing this but was having so much fun and this steak came SO FREAKING PERFECT AND DELICIOUS!!!

2 inch thick New York Sirloin Steak
Rubbed with fresh ground salt and pepper
Firebox burning charcoal and Mesquite logs
Smoked at 250 to an internal temp of 120
Seared for a few seconds on each side
PERFECT MEDIUM RARE and DELICIOUS!
