In today's cook we have a backyard experiment... I wanted to see if its possible to salt brine a brisket overnight like I've done with other large cuts of beef and how it would compare to my normal Texas Style brisket. So you'll get to see this test on my Lone Star Grillz offset as I take it low and slow and cook with pecan wood. This will also be my first time cooking a brisket that was less than 9lbs and I tell you the results were phenomenal!! This is a must see, I keep the recipe pretty simple but there are always a few twists!!
