Our Apple Pie Thumbprints Cookie Recipe are buttery thumbprint cookies with a fresh apple filling. These apple cookies have all the flavor of a homemade apple pie packed into a bite size buttery thumbprint cookie. These are a little different from jam thumbprint cookies, and with an apple pie filling flavored with everyone's favorite warm cozy spices, they're great for the holiday cookie tables and Christmas cookie platters.

Apple Pie Thumbprints Cookie Recipe Ingredients
Apple Pie Filling Ingredients
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1/8 teaspoon ground cardamon
2 tablespoons salted butter
1 teaspoon cornstarch
1 teaspoon water

1 3/4 cup all purpose flour
1/2 teaspoon kosher salt
8 tablespoons salted butter
2/3 cups granulated sugar
1 egg
1 teaspoon vanilla

Apple Pie Thumbprints Cookie Recipe Directions
First to make the spice mixture. In a small bowl, combine a quarter cup of sugar, a teaspoon ground cinnamon, a 1/4 teaspoon ground ginger, ⅛ teaspoon nutmeg and ⅛ teaspoon cardamon. Give this a good mix and set it aside for later.

Cut, core and peel three apples. Dice into pieces about a quarter inch square. Place into a medium saucepan Add a tablespoon of fresh lemon juice and stir. Pour in the spice mixture, and stir to combine. Top with 2 tablespoons of salted butter, then begin cooking over medium heat. The butter will melt, and the apples will release some juices. Cover and cook for about 10 minutes. Check the mixtures as it cooks, adding a little water if necessary so the apples don’t burn and the mixture doesn’t become too dry.

Once the apples are soft and tender, mix together 1 teaspoon of cornstarch and 1 teaspoon of water to make a cornstarch slurry, and add it the apple mixture. Stir to combine, and bring the mixture to a boil. Cook for just about a minute, then remove it from the heat and set aside to cool.

Next to make the cookie dough. In a large bowl, measure out 1 ¾ cups flour, and ½ teaspoon kosher salt. Give this a whisk to combine, then set aside for later.

In another large bowl, combine 8 tablespoons of softened salted butter, and ⅔ cup sugar. Beat on medium speed until the mixture is light and fluffy, about 3 4 minutes, stopping to scrape the bowl.

Add one egg, and 1 teaspoon vanilla extract. And mix on medium speed until well blended. Then add a half of the flour mixture, and beat until just incorporated. Scrape the sides of the bowl, and add the rest of the flour mixture and beat just until combined.

The dough will be soft and buttery, make loose dough balls about an inch and a half in size, and place on baking sheets lined with parchment paper, about 2 inches apart. Use a half teaspoon measure to press an indent into the top of each cookie, forming a bit of a well that the filling will sit in.

Spoon in about a half teaspoon of the apple pie filling into the indent in each cookie. And if you have any extra apple pie filling, you can make an amazing apple pie toaster strudel, with a little puff pastry. Chill for about 30 minutes, then bake in a 350 degree preheated oven for about 20 25 minutes. This recipe will make about 2 dozen cookies.
