Simple Sauteed dandelion greens for good digestion
INGREDIENTS
1 bunch dandelion greens, tough (lower) parts of stems removed and leaves coarsely chopped
2 tablespoon olive oil (can substitute coconut or avocado oil)
1 onion, halved and thinly sliced
2 large garlic cloves, coarsely chopped
Salt and freshly ground black pepper
Optional add ins
1/2 teaspoon crushed red pepper
2 tbsp nutritional yeast
INSTRUCTIONS
Bring a large pot of slightly salted water to a boil. Add greens and cook, uncovered, 25 minutes. Scoop out the greens with a skimmer or slotted spoon into a colander, then rinse under cold water to stop cooking. Drain well, gently pressing out excess water, and transfer to a bowl.
Meanwhile, heat oil in a medium pot or pan over medium heat and add onions and garlic, stirring in the oil until tender and fragrant, about 8 minutes. Add greens and cook, covered, stirring occasionally, for 510 minutes more. Serve warm!
