Ingredients
Large poblamo peppers, amount depends on the size of your baking dish...I used 5 for a 9x11 inch pan
2 cups Monterey jack cheese, shredded (16oz)
1 cup Cheddar cheese, shredded (8oz)
5 eggs
1 1/2 cups while milk (12oz)
3 tbsp flour (45g)
1 tsp baking powder (5g)
1/4 tsp each garlic powder and onion powder (.75g
Salt and pepper to taste
Cover the peppers with oil and place them under the broiler in your air fryer or oven on high heat for 20 minutes, flipping after 10 minutes. You can also place them on your grill or over an open flame on a gas burner. You are charging the skins to make peeling them easier.
After they are charred place them in a baggie or a bowl and cover with plastic wrap to allow them to steam for about 10 minutes
Now peel off the skins and remove the seeds. Be sure you keep them whole.. DON'T CHOP THEM!
In a bowl mix the milk, eggs, flour, garlic and onion powder, baking powder and salt and pepper.
Whisk until no lumps
Now spray your baking dish and lay down 1 layer of the peppers.
Top with half the Monterey jack cheese and the Cheddar cheese
Add another layer of peppers, then cheeses
Now pour your egg mixture over the whole thing
Airfry on bake mode at 350°F/177°C for about 30 to 40 minutes.
Cook until set and no longer jiggly
