Agave Pit Bake Under Full Moon

Follow
Chad Zuber

The desert agave plant has been used as a source of food since primitive times. The leaves, stalk, heart, flowers and nectar are all edible and have long been a traditional food among indigenous tribes of the deserts of southwestern United States and northern Mexico and often was the main food depended upon for their survival.

In this video I show a simple way to bake the leaves in a pit over night. This was the night of the full Flower Moon which occurs in May. I spent the night on a boulder and in the morning I uncovered the pit and ate the leaves. Eating desert agave leaves is similar to eating sugarcane. There are a lot of tough fibers inside but agave is juicier than sugarcane but not as sweet. My technique could be improved. I believe that more heat, less cooking time, and wrapping the leaves would help produce a higher quality product.
