Italian Lentil Soup
1 cup lentils (optional: soak for 23 hours if you like to soften)
1 onion chopped
2 carrots sliced
2 stalks celery chopped
3 cloves garlic
1 can tomato paste
6 cups water
salt, pepper and Italian seasoning to taste
1 boullion cube (chicken, beef or vegetable)
1 tsp honey
6 cups spinach leaves

Heat 3 TBSP olive oil in a pot over medium heat.
Add onion and cook for about 10 minutes till it turns golden. Add carrots, celery, garlic and tomato paste and let cook another few minutes. Add in the remaining ingredients, except spinach and let simmer about 40 minutes.
At the end add the spinach and stir till wilted (about 12 minutes)
Top with parmesan cheese and serve
