6 Mouthwatering Recipes to Brighten Your Table

(1) Quick Caprese Salad Made in 5 minutes, there’s no better lunch! An Italian Caprese salad is one of those dishes that simplicity makes it shine. Like any classic item, whether it being art, music or food, adding to it, will not make it better. The secret is not in the recipe, but in the quality and freshness of each ingredient, that is crucial. Good tomatoes should have enough sweetness and acidity, so no sugar or vinegar is required. I used the heirloom variety straight from my garden, you can’t beat that! You need fresh buffalo mozzarella cheese, forget anything else! If you really can’t find buffalo, then cow mozzarella will still work, but it has to be fresh. The olive oil needs to be real pure virgin olive oil that’s first pressed. The basil of course needs to be fresh. Use quality crystal salt that you can crunch on and freshly cracked pepper for full aroma.

(2) Garlic Prawns in a Cream Sauce With, chili, parsley and white wine. Garlic prawns or shrimps are one of those meals that deliver high returns.  It’s simple to make, quick to cook and the results equate to a fancy restaurant dish.  Of course you need good product, so buy the biggest freshest most local shrimps you can find.  The ones with the tails still attached are usually the best.

(3) Penne Pasta Primavera Healthy and quick to make! A simple to make vegetarian pasta dish, that is healthy. This dish is healthy, as it is vegetable rich and contains less pasta, therefore less carbohydrate. Pasta Primavera means Spring Pasta, usually relating to seasonal Spring vegetables. So the idea is to buy local seasonal fresh vegetables. It is simple to make, as it’s cooked in one pan, aside from the pasta water, and the vegetables retain their firmness and freshness. Any leaked nutrients simply remain in the sauce. The best part is that it still feels like you are eating a huge pasta meal, but in reality, you’re consuming almost half a regular serve of pasta. You can prepare everything by the time the pasta is cooked. So in 25 minutes, it’s ready! Enjoy my Penne Pasta primavera.

(4) Italian Potato Salad with fresh herbs, garlic and olive oil. One of the easiest and healthiest potato salad you will find. This one has no mayo or cream bases, it simply has the Mediterranean flavour of garlic and olive oil enhanced with fresh herbs and lemon. Couldn’t be simpler. The secret is using the kipfler potatoes, there’s simply no better potato for potato salad. if you can’t find kipfler, then use a waxy variety. You can use dried oregano but the chives need to be fresh. If you can’t find chives, then use spring (green) onion.

(5) Toasted Cheese and Ham Sandwich. Italian style with tomato, oregano and basil. There’s simply no better way to make a toasted cheese sandwich for an incredible taste. By frying the bread in olive oil, it brings it to a whole new level. Then by cooking the tomatoes and melting the cheese in a garlic infused oil, the flavours are as good as they can get. Add fresh basil and oregano, all on smoked ham and wow! The best toasted cheese and ham sandwich you will ever taste.

(6) Herb Crusted Salmon With Butter Caper Sauce. Easy To Make and Oven baked. The most delicious herb crusted salmon recipe you will taste. This herb crusted salmon has only 2 herbs, not to over power the salmon flavour. It’s made with parsley and spring onion also known as scallion (not really a herb but the green part is close). This enhances the flavours of the fish without taking away its subtleties. I would suggest to eat salmon medium to medium rare inside, do not over cook, although it is an oily fish, it still can taste dry when overcooked. It may be my French/Mediterranean background, but for me everything needs a sauce. That’s why I made this simple butter caper sauce which literally takes 3 minutes to make.
