Today I am sharing 4 meals I cooked this week for our family.. these are all really quick and easy so I hope you enjoy them as much as we did :)

MEALS:
LEMON CHICKEN:
6 chicken thigh fillets, 400g orzo, 2 lemons juiced, 600ml veggie stock, 100g frozen spinach,Salt & pepper, cheese
SALMON PASTA:
499g spaghetti, 1 white onion, 5 cloves garlic, 2 salkon fillets, 100g spinach, 200g soft cheese, 200ml veg stock
GNOCCHI TRAYBAKE:
400g gnocchi, 200g chorizo, 300g mixed tomatoes, 50g rose harissa, olive oil, cheese
QUESADILLAS (per wrap):
2 wraps, refried beans, sour cream, guacamole, salsa, cheese, sweetcorn, cucumber, wedges
