We challenged chefs of three different skill levels amateur John, home cook Julie, and professional chef Palak Patel from the Institute of Culinary Education to prepare us a grilled fish. Once each of them had presented their creation, we asked food scientist Rose to explain the choices they made along the way both good and bad. Which of these grilled fish looks most tempting to you?
